Our art starts from a careful selection of rye, from rye fields in Lower Austria. We know the origin of each grain of our rye breads. A small family-run mill with a long tradition of milling is turning this pure and natural rye into flour we are using for our breads.

Rye, the queen of cereals!

Rye contains carbohydrates, fiber, protein (and gliadin fraction), minerals (potassium, phosphorus, magnesium, calcium, sodium, sulfur, manganese, copper, iron, zinc, iodine), B vitamins and vitamin E. Rye is significant in that it contains lysine, which is not present in other cereals. Rye has relatively little gluten, which combined with quality plant fiber makes rye breads have a significantly lower glycemic index than white breads. After consuming rye, there are no sudden spikes in blood sugar, and thus no insulin, which after a short time also drops sharply and causes hunger.
